Brownie Batter


Healthy Better Brownie Batter
With out the refinement 

1 1/2 tbsp trader joes cocoa powder
2 tbsp agave organic agave nectar 
Salt to taste
Blend well
Optional 1/2 tsp soft butter
Blend
1 tbsp coconut flour
Mix well
Add a touch more salt if needed

Servers 1
Don't bake I didn't try it
Calories 185 without butter
So if it were a really brownie batter possibly 350 to 650 calories

Southwestern Turkey Sliders


SOUTHWESTERN TURKEY SLIDERS

1 LB TRADER JOES REGULAR GROUND TURKEY
1/4 C DRY MINCED ONION
1 TSP CUMIN
1 TSP GARLIC POWDER 
1 TSP KOSHER SALT
1/2 TSP FRESH GROUND PEPPER
1/2 C ORGANIC BREAD CRUMBS
1/2 C SHREDDED PEPPER JACK CHEESE
1 PACK TRADER JOES SLIDER BUNS

MIX ALL TOGETHER, FORM 2IN PATTIES MAKES 9, COOK ON NON STICK PAN NO OIL UNTIL DONE SERVE ON SLIDER BUN TOPPED WITH TANGY COLE SLAW RECIPE BELOW 

TANGY COLE SLAW 

1 BAG TRADER JOES ORGANIC COLESLAW MIX
1/3 PLAIN FAGE GREEK YOGURT
1 TBSP ORGANIC MAYO
1/8 TSP BLACK PEPPER
1/4 TSP SALT
1 TBSP APPLE CIDER VINEGAR 
1 TBSP MILK
2 TBSP ORGANIC SUGAR 

WISH THE WET AND TOSS IN THE SLAW 

TOP SLIDERS AND HAVE SOME AS A SIDE

Faux Chocolate Chickpea Cookie Dough adapted from Dr. Oz


Faux Chocolate Chickpea Cookie Dough

1 can chickpeas drained and blend til creamy in food processor 
1/4 c agave nectar (Blend w/peas)
1/4 c peanut butter 
1/2 tsp vanilla 
1/2 tsp salt
1/2 tsp baking soda
2 tbsp coconut flour
1/2 c semi sweet chips (vegan if you)

Blend chickpeas with agave til creamy in food processor.  Then remove to a clean bowl and mix in peanut butter. Add vanilla mix and soda and salt mix, blend in coconut flour and fold in chips, EAT, enjoy no baking required and I didn't try it so not recommendedat this point.

Easy Lasagna


Easy Lasagna 

1 container whole milk ricotta cheese (yes)
1/2 tbsp Italian season 
1/2 tsp kosher salt
A few grinds pepper corns
1/2 c of parmigiano cheese blend (in fridge section by the lb product of Argentina)
1/2 diced sweet or red onion 
1 or 2 tbsp olive oil 
1/2 tbsp garlic powder 
1 lb grass fed beef (or turkey I prefer beef)
1 jar marinara 
2 cans Italian diced tomatoes 
2 or 3 c shredded mozzarella or what you have in hand
1 box of no cook lasagna noodles 

  • Mix the 1st 5 ingredients in a bowl set aside

Saute onion in oil till fragrant then brown meat add garlic & salt pepper to taste
When cooked add in all tomato products mix simmer for a few until hot.
Spray a deep dish 9x13 casserole dish.

Start with layer of noodles and spread half ricotta mix over them add 1/4 of sauce

Next layer noodles layer 2 c cheese sprinkle extra parm onto the top of cheese if you like parm alot.  Add 1/4 sauce 

Layer noodles again spread last of ricotta top with 1/4 sauce.

Last noodles layer top with last of sauce and sprinkle remaining shredded  cheese.

Bake 350 for 35 to 45 min or till noodles are soft to cut through. 

You can even add spinach if you like in the layers 

Enjoy with salad and garlic bread

Chocolate Chia Pudding Power Smoothie


Chocolate Chia Pudding Power Smoothie 
  • Make in this order in blender 
2c Unsweetened vanilla almond milk 
3 tbsp chia seeds
1 medium  banana frozen (key to consistency)
2 tbsp cocoa powder 
1 tbsp real maple syrup 
1 tbsp agave nectar 
1 tbsp coconut oil  (makes it more satisfying)
2 tbsp creamy peanut butter salted (I used the new no stir trader joes brand)
1 soft avocado

Optional: for added fiber 1/2 c raw oatmeal old fashion slow cook. The one I made above was without oats.

Blend in blender, not the fancy high tech kind you don't want it to runny. Just a regular blender will do.

Green Protein Smoothie


Green Protein Smoothie 

  • 2c Coconut water chilled
  • 3 tbsp chia seeds 
  • 1/2c plain Greek yogurt (you can also make frozen cubes with silicone molds. I found some at IKEA for .99 cents they are 1 tbsp squares. Use 6 to 8 depending on how awesome your blender is, mine is way old)
  • 1 & 1/2 c frozen Pineapple chunks 
  • 1c frozen spinach 
  • 1 small banana  (frozen works in chunks)
  • 1 lime squeezed 
  • 1/2 to 1 tbsp agave nectar or not at all 
Blend all together in a blender, serves 2
